Cartilage may prove to be the most wondrous component of the shark. Their skeletons are made entirely of cartilage, a hard, gristly but flexible material. Unlike bone, it has no blood vessels. Shark cartilage consists of calcium, phosphorous, and an acidic mucopolysaccharide / protein complex. It contains collagen and complex carbohydrates called glycosaminoglycans, including the well-known chondroitin sulfates A and C , glucosamine and glycoproteins. It is effective due to the way it stimulates the cellular and hormonal components of the immune system.
